Choc’Armor is a whole milk powder obtained by roller drying, also called the “Hatmaker” process.

This ingredient improves the use of the chocolate, thanks to a high free fat content. In addition to this free fat content, Roller milk powder can be used to add gourmet notes to chocolate or pastries. Intense heating on the rollers causes a Maillard reaction, creating a pleasant baked, biscuit-like and caramelised flavour. This unique flavour profile offers characteristics that are incomparable with other dairy sources.
