Whey is the liquid part of milk, a by-product resulting from the production of cheese. The whey produced during the manufacture of hard cheeses (such as cheddar) is known as sweet whey; sour (or acid) whey is a by-product of softer products such as yoghurt and cottage cheese.

Our demineralized whey powder is produced from sweet whey, and is suitable as a milk substitute or filler in high-quality food products. It can be used more widely than native whey, as its taste is more neutral.
LactarmorTM DM 90 is a sweet whey protein powder demineralized at 90%. It offers a higher concentration of serum protein and so is suitable for infant nutrition.
Lactose is a carbohydrate (slow sugar) and the main component of whey (around 80%). Edible lactose is concentrated by evaporation to 99% and can be used as a sweetener for chocolate, confectionery and ultra-fresh products. Refined lactose is purified to 99.4% and is suitable for infant nutrition.
Whey permeate is derived from whey by filtration, concentration and atomization. It is low in protein, but has a high lactose and mineral content, making it suitable as a bulking agent in many food applications, including ultra-fresh products.
