Oragel® DY 101 XP

Oragel® DY 101 XP is a whey protein concentrate with great gelling power. Dispersed in a neutral medium, it is used to activate proteins in an acidic medium to produce yoghurt and low-fat fresh cheeses.
The texturising properties of ORAGEL® DY 101 XP allow it to be used in a wide range of applications such as cheeses, dairy products, cold cuts and vegetarian products.
